Thai Beef Salad

Ingredients

150g steak

1 teaspoon lemon grass, finely chopped

1 Tablespoon oil

10 mint leaves, roughly torn

 1 coriander plant, roughly chopped

½ small red onion, finely sliced

½ Lebanese cucumber, thinly sliced

5 cherry tomatoes, half or quartered

2 Tablespoons sugar

2 Tablespoons fish sauce (Squid)

3 -4 Tablespoons lemon/lime juice

½ - 1 teaspoon dried chilli

2 Tablespoon toasted rice, coarsely grounded

Preparation

1.  Marinade beef with lemongrass, oil, mint, coriander and red onion and let it sit for 30 minutes

2.  Grill or sear beef to medium rare or to your liking.  Set aside.

3.  Mix fish sauce, sugar, lemon juice and dried chillies. 

4.  Slice beef thinly.  Mix with ground rice.  Add other salads and dressing.  Mix well.  Taste test and adjust taste to personal liking.
