Balinese Style Tomato Prawns
Ingredients:
400 grams prawns (veins removed)
1 lemongrass stalk (sliced thinly)
1 kaffir lime leaf (shredded)
2 tbsps sweet soy sauce
1 tbsp brown sugar
1 red onion (sliced into wedges)
1/2 cup of tomato sauce (or add a cup depending on how ‘saucy’ you want it’)
3 tbsps of peanut oil (or vegetable oil)
Dash of pepper and salt to taste
Chili paste (sambal) for that extra spicy kick *optional*
Coriander (finely chopped)
Method:
Heat the frying pan to medium heat. Add oil.
Add red onions, kaffir leaf, and lemongrass. Stir fry until fragrant.
Add sugar.
Add prawns and stir fry until fully cooked.
Add tomato sauce and sambal (if using)
Top with coriander and enjoy!
