Chocolate and Davidson Plum Sponge Cake
Fun in the kitchen over the weekend with my little girl. We baked a cake from scratch for the 1st time with a little help from Grandma and Aunty over the phone. Results - Yummy Mum

Chocolate and Davidson Plum Sponge Cake
Ingredients
200 gms or 1 cup self-raising flour
250 gms or 1.25 cup Castor sugar
50 gms or 1/4 cup cocoa powder
3 tsp Davidson plum powder
1 tsp baking powder
1 tsp vanilla essence
3/4 cup oil
Method
1. Preheat the oven to 170゚. Spray your baking tin with oil.
2. Place the sugar in a mixing bowl. Add 1 egg at a time while beating the mixture. Beat until you get a glossy smooth mixture
3. Slowly add flour, vanilla essence and baking powder to the mixture while beating. Continue beating and till mixture is smooth about a minute
4. Add cocoa powder and Davidson plum and beat for another minute.
5. Pour the mixture into a baking tin and place in the oven for 30 to 40 minutes. To check if the cake is done insert a blunt knife and if it comes out clean your cake is baked.
6. Enjoy with a dollop of cream or ice cream.
